Oviedo is set in a place of rich history. There is little evidence of the original inhabitants of the area, the Timucuan clan of the Seminole tribe of native people. Oviedo was incorporated in 1929, but its history stretches back much farther, to 1865, when homesteaders first settled the area. Formerly known as Lake Jesup Community, Oviedo was named for the Spanish city of Oviedo by Andrew Aulin, who was appointed the first postmaster. Oviedo became known for its citrus and celery crops grown by a few hundred inhabitants.

Today, Oviedo is a bedroom community of Orlando, boasting nearly 40,000 residents. The celery and citrus are now grown in the backyards of many Oviedo homes. There is a constant reminder of the area's past in its (in)famous flock of wild chickens that have been pecking their way around Oviedo's downtown area since 1875. "Oviedo's Chickens" have become one of the city's unique attractions as well as a reminder of times gone by.
